Why is Our Chicken Different?
At Tiki Bird, great chicken starts with the bird itself.
We source high-quality whole Colorado chickens and break down every one in-house. Every breast, thigh, wing, and yes—even the skin—has a purpose. By utilizing the entire bird, we reduce waste while creating dishes that showcase every part.
Before a single piece ever hits the grill or fryer, it's carefully brined. This locks in moisture, seasons the chicken from the inside out, and creates the juicy, flavorful bite that sets our chicken apart.
It's why our chicken stays tender, never dry, and packed with flavor from the very first bite. As a result of our brining process, you may notice a slight pink hue near the bone on some pieces of chicken. That's completely normal and a sign of our fresh, carefully prepared chicken, not that it's undercooked.
Unlike many casual restaurants, we don't cook our chicken hours ahead of time or bring it in par-cooked. Every order is cooked fresh, which means it may take a few extra minutes—but we believe great food is worth the wait. Every piece is temperature checked to ensure it's perfectly cooked before being individually finished with the sauce or seasoning that makes each menu item its own.
